
I came across this nice recipe the other day. It looked delicious and very similar to a dish I had attempted to cook several times. It is called Okra Stew with Chicken, Sausage & Shrimps.
However, the recipe is wacky! It is poorly written with missing steps. There is NO alignment of the ingredients with the directions. It was one of the worst recipes I ever came upon. Ironically, I have all the ingredients to make this dish. So, I spent 24 hours… all night deconstructing the recipe in order to cook this stew the right way!
So, nevermind the initial poorly written recipe, here is my perfected recipe for Okra Stew with Chicken, Sausage and Shrimps!
Ingredients
- Chicken parts
- Water
- Chicken bouillon
- Bay leaves, dried
- Celery, chopped
- Onion, chopped
- Green bell pepper, chopped
- 3 garlic cloves, minced
- Olive oil
- Skinless smoked sausage, sliced
- Frozen okra, cut
- Canned whole tomatoes, chopped and drained. But, set aside the juice.
- Creole seasoning
- Cajun seasoning
- Garlic powder
- Red pepper flakes
- Poultry seasoning
- Onion powder
- Chicken stock (made from boiled chicken bouillon)
- Frozen shrimps, shelled and deveined
Directions
Bring a pot of water to a boil. Add chicken bouillon and dried bay leaves. Then, add chicken parts, bring to a boil, cover and simmer for 45 minutes. When time is up, drain water, set aside and keep chicken parts covered until cooled. When cool, debone chicken and set aside.
In a pot, heat olive oil. Add celery, onions, bell peppers and garlic. Sauté for a few minutes. Add sausage, okra and continue to sauté. Add tomatoes and seasonings.
Add the fresh, set aside chicken stock. Do not add too much as this is a stew, not a soup! Add cooked deboned chicken.
Finally, add the shrimps and cook ONLY until pink. NEVER OVERCOOK the shrimps. It takes LESS than 6 minutes for the shrimps to be ready!
