We just do not know what to expect during this 2020 pandemic. Did you ever image that prices would soar so fast? I was astonished of how fast my former favorite grocer increased prices. I was totally shocked! Sticker shock is happening with produce, chicken, supplies, and definitely gas prices.

Back in 2020, I decided to revisit my favorite recipes to come up with good meals at lower costs until this madness with rising food costs stabilizes. Here is a long time favorite that is tasty and cost-effective. I named this dish “Pandemic Pasta“. Here’s the recipe.

Pandemic Pasta

Ingredients

  • Hot dogs, sliced
  • Green bell pepper, chopped
  • Onion, chopped
  • Garlic, minced
  • Veggie oil
  • Canned whole tomatoes, chopped (save the juice)
  • Tomato sauce
  • Dried basil leaves, seasoned salt, pepper and parsley flakes
  • Elbow macaroni boiled to al dente and set aside

Directions

Heat oil in pan, add hot dogs, bell peppers, onions and garlic. Saute until onions transparent. Add chopped tomatoes and continue to simmer.

Boil elbow macaroni until al dente for about 5 to 6 minutes. Drain

Fold hot dogs, veggies into macaroni. Add tomato juice and tomato sauce and mix. Simmer for a couple of minutes. Add basil, seasonings to taste and garnish with parsley.

Enjoy and consider a simple side salad along with the Pandemic Pasta!
