My father loved my maternal grandmother’s potato salad. It was delicious. When we visited my grandparents, my grandmother always prepared a jar of potato salad for my father. Hence, we rarely got any…. he wasn’t sharing. LOL!
I never pursued learning how to make potato salad. As a young “on-the-go” professional, it was easier for me to just buy bland potato salad from the grocery store. That is exactly what I did for well over 20 years. I may have attempted to make potato salad but the dish did not taste good. So, I was like…. whatever.
During the past 18 years, I have been doing all of the holiday cooking. So, I decided to take on the challenge for making delicious potato salad. In very recent years, my brother-in-law stated… “This is the BEST potato salad!” That was the day that I knew I mastered the art of making delicious potato salad and I have been perfecting my recipe… and it is sooooo delicious. I am happy to share this complicated but worthy recipe.
You’ll notice that I do not use specific measurements. I “eyeball” and sample a bit as I go. I also do not promote brand named food items, but Hellmann’s mayonnaise and Marie’s Thousand Island salad dressing have given me success with this recipe.
Ingredients
- Potatoes, I prefer Idaho, white or Yukon
- Water
- Salt
- Dried basil leaves
- Garlic powder
- Onion, minced
- Bell pepper, chopped
- Sweet gherkins, chopped
- Sweet relish
- Sugar
- Hellmann’s mayonnaise
- Marie’s Thousand Island dressing
- Eggs, boiled
- Paprika
- Seasoned salt and pepper
Directions
Bring a pot of water to a boil. Add salt. Once there is a rolling boil, add the peeled, evenly cubed potatoes. Boil the potatoes for EXACTLY 10 minutes.
Drain potatoes immediately.
Add all of the following immediately to the drained potatoes: basil leaves, garlic powder, sugar, seasoned salt, pepper, minced onions, chopped bell pepper, chopped gherkins, sweet relish, Hellmann’s mayonnaise, Marie’s Thousand Island salad dressing, and chopped boiled eggs. Save one egg for garnishing.
Very carefully fold the mixture. Do not over mix as the potatoes will become mashed.
Place potato mixture in a container, cover and chill.

Give the recipe a try, use the amounts that works for you and remember to not give up! It may take a couple of attempts. But, if you only boil the potatoes for exactly 10 minutes, you should do fine! You can do this!!!!
